My pastry chefs plating presentation for pina colada dessert. It mostly just a bunch of pretty cookies, sauces, and creams stuck together on a plate lol.
You got a pina colada bavarian cream pyramid on a sugar dough cookie with a chocolate filigree on top. It's surrounded by kiwi sauce, pineapples under a caramel cage, and a dot of whipped cream topped with roasted coconut with a palm tree cookie stuck in it. The palm tree cookie is supossed to have a trunk, yes, but the chef decided the class before us made the trees too small so ours ended up being too big to even stand up lol. So we just stuck the top of the tree in the whipped cream lol. Shrub palm tree  |

We attempt to accomplish this by daily featuring Literature artists from around the community that deserve the recognition, but are not getting it.
